Creamy risotto with chunks of sweet potato and just a hint of nutmeg. An easy skillet meal. Great with a fresh salad and a loaf of crusty French bread. Contains chicken base.
In a large skillet over medium heat, cook rice in 1 Tablespoon of oil (pecan oil recommended) for 3 minutes, stirring constantly or until rice starts to turn golden brown. Add 3 cups of water and the spice/sweet potato packet. Reduce heat to low and stir almost constantly until the water is almost absorbed. Add another 3 _ cups of water and repeat. When all water is absorbed, add 2 Tablespoons butter or pecan oil and the dry cream packet. Stir until combined; serve immediately.
Total cook time: 30 minutes
For fewer serving sizes, you can proportionately use less of each ingredient, and save the rest for another day.

The reusable containers serve as compost bins for Inner Chef customers. Food compostables can be put back into those containers and sent back to Trashless at the time of the next delivery. Those compostables are then sent to local farms to be used as food for pigs or composted into fertilizer.
