White Minestrone Soup with Shaved Parmesan
We lightened up classic minestrone soup with a clear broth full of cabbage and kale, but kept its trademark beans and macaroni. A garnish of salty parmesan is the perfect finish.

Prep ahead (optional)
a. Cut kale stems from leaves and ¼” dice; chop leaves bite-sized. b. ¼” dice celery and ½ yellow onion. c. Peel carrots and ¼” dice or cut into coins. d. ½” dice red potatoes. e. Chop cabbage bite-sized. f. Mince garlic.
Instructions

Cook soup:
a. Drain and rinse cannellini beans/navy beans/white beans. Set aside.
b. In medium saucepan, add ½ yellow onion (¼” dice), garlic (mince), kale stems (¼” dice), celery (¼” dice), carrot (peel, ¼” dice or coins), ½ tsp salt, and white minestrone herb mix. Cook until fragrant and vegetables soften, about 2-3 minutes.
c. Add kale leaves (chop bite-sized), cabbage (chop bite sized), and red potatoes (½” dice); cook until greens wilt, about 1 minute.
d. Add cannellini beans and 6 cups water (3 cups water for 2-person portion). Cover and bring to a boil.
e. Add elbow macaroni. Reduce heat to medium and cook until macaroni is al dente and potatoes are fork-tender, about 10 minutes.

Serve:
a. Divide white minestrone soup among bowls.
b. Garnish with parmesan cheese (shaved with vegetable peeler), pour the wine, and enjoy.

To spice things up, add a pinch of red pepper flakes or a grind or two of black pepper.
