White Bean Cassoulet with Vegan Sausage & French Salad
We tweaked a traditional French Country cassoulet by speeding up the cook time and making it vegetarian (gasp!). The rich tomato-y base, creamy white beans, and seared vegan sausage may make you a believer.

Prep ahead (optional)
a. ¼”-½” dice celery. b. Peel carrots, cut oblique or ½” coins. c. Cut tomato into ¼”-½” slices. d. ¼” dice yellow onion. e. Pull leaves off lettuce, keep whole or chop bite-sized. f. Mince garlic and chives. g. Strip thyme leaves off stem.
Instructions

Cook sausage:
a. Remove vegan sausage from casing and cut into ½”-thick coins.
b. In large saute pan over medium-high heat, add 2 tsp olive oil. Add vegan sausage and brown, 2-3 minutes each side. Set aside.

Cook cassoulet:
a. Preheat oven to 425º. Prep medium casserole dish or iron skillet with olive oil.
b. Drain and rinse cannellini beans. Set aside.
c. In same saute pan, add 3 tsp olive oil. Add garlic (mince), yellow onion (¼” dice), carrots (peel, ¼”-½” oblique or coins), celery (¼-½” dice), and ½ tsp salt. Cook until onion is translucent, about 2 minutes.
d. Add tomato paste; stir to combine and cook until tomato paste is deep mahogany.
e. Add vegetable broth paste and 2 cups water (1 cup water for 2-person portion). Stir, scraping yummy bits from bottom of pan. Add thyme (strip leaves from stem).
f. Cook until broth is reduced by half. Add field roast sausage and cannellini beans. Stir to combine. Transfer to casserole dish. Bake until bubbly, about 7-10 minutes, depending on depth of the dish. A more shallow dish means less cook time.

Assemble salad:
a. In medium bowl, add romaine lettuce (pull leaves, whole or chop bite-sized), roma tomato (thin sliced or chopped bite-sized), and red wine vinaigrette. Toss to combine.

Serve:
a. Divide cassoulet among plates or bowls.
b. Serve salad alongside. Pour a glass of wine and enjoy.
Chef's notes
This vegetarian recipe can become vegan by simply omitting the brie in the side salad. If you aren't a fan of field roast, sub a beef kielbasa, roast chicken, or even roast duck for an extra dose of the traditional. Be sure to account for additional cook time when adding a meat other than kielbasa, which will typically caramelize in the same time as the field roast.
