West Coast Flatbread Pizza
This flatbread pizza has plenty of West Coast flair thanks to fresh toppings like red onion, cherry tomatoes, spinach, and cilantro. All of that, along with the tender bites of chicken and traditional mozzarella cheese, is drizzled with a chipotle ranch dressing. Dig in!

Prep ahead (optional)
a. Slice avocado in half lengthwise, remove pit, cut grid, and spoon out pieces. b. Slice cherry tomatoes in half. c. Thinly slice red onion. d. Trim spinach stems; chop leaves bite-sized. e. Mince or rough chop cilantro leaves and tender stems.

Prep:
a. Preheat oven to 425º.

Cook chicken:
a. Cut chicken into bite-sized pieces. Season with ½ tsp salt, ¼ tsp black pepper, and ½ tsp granulated garlic.
b. In a large saucepan over medium-high heat, add 1 tbsp olive oil and chicken pieces. Cook until golden and opaque throughout, 3-4 minutes each side. Set aside.

Cook onions and spinach:
a. In the same sauté pan over medium-high heat, add 1 tbsp olive oil, red onion (thinly slice), and a pinch of salt. Sauté until translucent, 2-3 minutes.
b. Add spinach (trim stems, chop leaves bite-sized). Cook until slightly wilted.

Assemble and cook pizzas:
a. Place naan on a large baking sheet.
b. Top naan with red onions and spinach, chicken pieces, and shredded mozzarella cheese.
c. Bake in preheated oven until cheese melts and naan crisps, 5-6 minutes.

Serve:
a. Top with cherry tomatoes (slice in half) and avocado (slice in half lengthwise, remove pit, cut grid, spoon out pieces).
b. Garnish with a drizzle of chipotle ranch dressing and cilantro (rough chop stems and leaves).

Vegetarians can make easy substitutions (Beyond Meat "chicken," for example) and won't miss a thing.
