Veracruz Migas and Home Fries
This breakfast for dinner features farm-fresh eggs, flavor-packed home fries, and a chunky Veracruz-style green sauce.

Prep ahead (optional)
a. ½” dice zucchini, potatoes, bell peppers, and yellow onion. b. Husk tomatillos and ½" dice. c. Mince garlic.
Instructions

Cook home fries:
a. In large sauté pan over medium-high heat, add 2 tsp olive oil. Add potatoes (½” dice), ½ tsp salt, and 1 tbsp Veracruz spice mix. Stir to coat.
b. Add ½ cup water and allow potatoes to steam, stirring occasionally, until water dissipates.
c. Cook until fork-tender. Remove from heat, place in medium bowl, and cover. Set aside.

Cook Veracruz sauce:
a. In large soup pot over medium heat, add 2 tsp olive oil and ½ tsp salt. Add 1 garlic clove (mince) and half of onion (½” dice), reserving remaining garlic and onion for migas. Cook about 2 minutes.
b. Add tomatillos (½” dice), bell peppers (½” dice), oregano sprig (leave whole), and ¼ cup water to loosen. Cook until ingredients soften, about 10 minutes.
c. Add zucchini; cook until fork-tender, 4 minutes.

Meanwhile, cook the migas:
a. Add eggs to medium bowl and whisk.
b. Wipe sauté pan clean. Over medium heat, add 1 tsp oil. Add remaining onion (½” dice) and garlic (mince); cook until onion is translucent, about 2-3 minutes.
c. Add cherry tomatoes (leave whole); cook about 3 minutes.
d. Reduce heat; add eggs. Let them spread and set, about 2 minutes. Add ¼ tsp salt and evenly spread cheese and corn chips (lightly crushed) over eggs.
e. Scramble eggs until firm, about 4-5 minutes.

Serve:
a. Divide migas, Veracruz sauce, and home fries among plates, and dig in.
Chef's notes
If your family prefers bold flavors, you will have more Veracruz spice mix to add than the recipe calls for. Add as desired!
