Vegetarian Lasagna Soup

Prep ahead (optional)
a. Leave spinach whole; compost dry stems. b. ½” dice tomatoes; reserve juices. c. Peel carrots; ¼” coins or dice. d. Remove tough mushrooms stems; ½” dice caps. e. Stack basil leaves, roll lengthwise, cut thin ribbons (chiffonade). f. Mince garlic. g. ¼” dice ½ yellow onion.
Instructions

Cook lasagna noodles:
a. In large saucepan over high heat, add 6-8 cups water and ½ tsp salt. Cover and bring to a boil.
b. Break lasagna noodles in 1-2” pieces and add to boiling water; stir immediately. Cook uncovered until tender, about 8-10 minutes.
c. Drain and drizzle with olive oil to avoid sticking.
**Chef Tip: When pasta is added to the soup during cooking, even after any leftovers are stored, the pasta will continue to soak up the liquid, leaving a mushy, not-brothy blob. We recommend cooking and storing pasta separately and simply adding it to the bowl when you go to serve the soup.

While waiting for water to boil, start soup:
a. In second large saucepan over medium-high heat, add 1 tbsp olive oil. Add ½ yellow onion (¼” dice), garlic (mince), and ½ tsp salt. Cook until onion is translucent, about 2 minutes.
b. Add tomato paste. Stir to combine and cook until tomato paste becomes dark red, about 2-3 minutes.
c. Add carrots (peel, ¼” coins or dice), cremini mushrooms (remove stems, rough chop), and lasagna soup herb mix; stir to combine and cook until mushrooms begin to caramelize, about 2 minutes.
e. Add tomatoes with their juices (½” dice, reserve juices), cannellini beans (drain), and 5 cups water (2½ cups water for 2-person portion). Stir to combine.
f. Reduce heat to medium-low, cover, and cook until carrots are tender, about 12-15 minutes. Remove from heat; stir in spinach (leave whole, compost long stems) until wilted. Salt to taste.

Serve:
a. Divide desired amount of lasagna noodles among bowls.
b. Ladle over soup and stir to combine.
c. Add dollop of fresh ricotta and garnish with basil (stack leaves, roll lengthwise, slice thin ribbons, chiffonade).
Chef's notes
To make this meal gluten free, simply sub in your favorite gluten-free brand of pasta. Lasagna noodles make it officially a lasagna soup, but any shape will work, preferably a thicker one with more bite like bow-tie or penne.
