Vegan Laksa
A delicious Malaysian noodle soup with veggies and tofu in a fragrant, golden yellow coconut milk broth. Topped with lime, cilantro and jalapeno slices, it is the perfect one pot meal you will love.

Prep ahead (optional)
a. Chop zucchini and bell peppers into ½" pieces. b. Mince garlic and ginger root. c. Rough chop cilantro. d. Lightly pound lemongrass bulb with the back of a spoon and tie into a 1" bunch. e. Chop spinach bite-sized. f. Juice lemon.
Instructions

Cook the noodles:
a. Bring 6 cups of salted water to a boil in a large pot. Remove from the stove and add the noodles. Cover and let sit for 5 minutes or until noodles are cooked al-dente.
b. Drain and rinse with cold water to stop cooking. Drizzle ½ tsp olive oil over the noodles and toss to prevent sticking.

Cook the soup:
a. Drain the tofu and pat dry with a paper towel. Chop into ½" cubes.
b. In the same pot that the noodles were cooked in, heat 1 tbsp of olive oil. Add half the tofu and saute until brown and lightly crisp on the outside, about 2-3 minutes. Remove with a slotted spoon and set aside.
c. Heat 1 tbsp of olive oil in the pan. Add the garlic (mince), lemongrass (lightly pound bulb with the back of a spoon; tie into 1" bunch), zucchini (chop into ½" pieces), bell peppers (chop into ½" pieces) and the panang spice mix. Saute for 2 minutes.
d. Add the ginger root (mince), laksa base, coconut milk and 3 cups of water (1½ cup for 2 person portions). Bring to a boil and simmer for 2-3 minutes.
e. Remove the lemongrass bunch. Add the spinach (chop bite-sized) and the lemon juice. Cover and cook for 2-3 minutes more.

Serve:
a. Divide noodles into bowls. Top with laksa soup.
b. Garnish with cilantro (rough chop) and crushed peanuts. Enjoy!
Chef's notes
This laksa recipe stays fresh (without noodles added to it; add them just before serving) refrigerated in an airtight container for 3-4 days.
