Tom Kha Gai with Mahi Mahi
This soup somehow manages to be both rich and wholesome - the coconut milk base provides its creamy texture, lemon grass and hints of lime brighten up the broth, and plenty of vegetables make it nutritious.

Prep ahead (optional)
a. Zest 1 lime; cut in half and juice. Cut the other into wedges for garnishing. (Halve quantities for 2 person portion) b. Rough chop roma tomatoes. c. Trim and discard oyster mushrooms stems; chop caps bite-sized. d. Cut broccoli florets bite-sized; thinly slice stems. e. Trim bell pepper stems; ¼” dice. f. Peel back one or two tough layers from lemongrass; smash or bruise bulb. g. Peel and thinly slice ginger. h. Stack basil leaves, roll lengthwise, and slice into thin ribbons (chiffonade).
Instructions

Infuse broth:
a. In medium saucepan, over medium-high heat, add 2 cups water (1 cup for 2 person portion).
b. Peel 1-2 layers of lemongrass; using a pestle, meat mallet or side of chef’s knife, smash or “bruise” lemongrass. Add to water.
c. Add juice and zest from 1 (½ for 2 person portion) lime, and ginger (peel, thinly slice).
d. Cover and bring broth to a boil, then immediately reduce heat to medium and keep broth at medium-high simmer.

Cook tom kha gai:
a. Dice mahi mahi into ½-1” pieces. Season with ½ tsp salt. Add to broth and simmer about 6 minutes.
b. Add red bell pepper (trim stem & seeds, thinly slice), oyster mushrooms (discard tough stems, chop or tear bite-sized), broccoli (small florets, thinly slice stems); cook until broccoli stems are just fork tender and mahi mahi is cooked through, about 5-7 minutes.
c. Add 2 cans coconut milk, tom kha gai base, roma tomatoes (rough chop); stir to combine. Reduce heat to low and cook uncovered until coconut milk is warmed through, about 5 minutes. *Avoid boiling, which can “break” the coconut milk making it less creamy. Salt to taste.

Serve:
a. Ladle tom kha gai into bowls. Compost lemongrass and ginger if desired, or simply eat around them.
b. Garnish with a squeeze of juice from remaining lime (cut in wedges) and Thai basil (stack leaves, roll lengthwise, thinly slice ribbons).
Chef's notes
This Thai soup can be made spicy with the addition of a jalapeno or Thai chilies. And if you prefer a vegetarian version, tofu makes the idea replacement for the chicken.
