Tofu Moqueca with Rice
A vegan take on a Brazilian classic that's packed full of vegetables and stars the classic Brazilian coconut lime flavor.

Prep ahead (optional)
a. Finely dice yellow onion and roma tomatoes. b. Peel butternut squash, chop into ½" cubes. c. Trim red bell peppers, slice into thin strips. d. Snap ends off green beans, leave whole. e. Chop spinach bite-sized. f. Mince ginger and garlic. g. Deseed jalapeno as desired, mince. h. Juice lime. i. Rough chop cilantro.
Instructions

Roast the butternut squash:
a. Preheat oven to 400º and grease a baking tray with oil.
b. Spread the butternut squash (peel, chop into ½" cubes) on the tray and drizzle some oil over it. Add to oven and cook for 30 minutes, or until butternut squash is tender.

Meanwhile, cook the rice:
a. In medium saucepan, over medium-high heat, add 2 cups water (1 cup for 2 person portions) and ½ tsp salt. Cover and bring to a boil.
b. Add brown rice. Stir and reduce heat to medium. Cover and cook until tender, about 30 minutes, draining any remaining water.

While the rice cooks, cook the moqueca:
a. Drain tofu, press with paper towel to remove extra moisture. Cut into ½" cubes.
b. Heat ½ tbsp coconut oil (or olive oil) in a large saute pan and add the tofu. Cook, stirring regularly, until lightly browned, about 5 minutes. Remove into a bowl and keep aside.
c. Heat 1 tbsp coconut oil (or olive oil) in the same saute pan. Add the yellow onion (finely dice) and saute for about 5 minutes, or until onions have softened.
d. Add the ginger (mince) and garlic (mince). Saute for 2 more minutes.
e. Add the roma tomato (finely dice) and continue cooking for 5-7 minutes, or until tomatoes are mushy. Add the moqueca spice mix. Stir well to combine.
f. Add the coconut milk, 1 cup water (½ cup for 2 person portions) and the lime (juice). Bring to a light simmer.
g. Add the green beans (snap ends, leave whole), red bell pepper (trim, slice into thin strips) and jalapeno (Optional. :deseed as desired, mince). Stir to combine. Continue cooking on low heat for 5 minutes, or until vegetables are tender.
h. Add the fried tofu, roasted butternut squash and spinach (chop bite-sized). Cook for 2 more minutes or until spinach wilts.

Serve:
a. Divide rice amongst plates. Top with tofu moqueca. Garnish with cilantro (rough chop). Enjoy!
Chef's notes
Alternative cooking tip: You can also add the butternut squash to the moqueca without roasting it. Add it to the sauce before adding the other vegetables. Let it cook for 10 minutes on a simmer and then add the other vegetables.
