Thai Quinoa Salad
A medley of fresh veggies and flavorful quinoa come together in this Thai salad. A rich & creamy peanut dressing adds a special kind of oomph.

Vegetable Broth Paste
2 1 teaspoon
Crushed peanuts
3 1.5 oz

Sea salt
1 0.5 teaspoon
Spice mix
Thai Peanut Dressing
Sesame oil
2 1 tablespoon
Tamari
2 1 tablespoon
Honey
2 1 tablespoon
Peanut butter
3 1.5 oz
Minced Ginger
2 1 tablespoon
Water
1 0.5 cup
Prep ahead (optional)
a. Shred the carrots and red cabbage. b. ¼" dice the onion, cucumber and bell pepper. c. Thinly slice the green onion.
Instructions

Cook the quinoa:
a. In a medium saucepan, mix the vegetable broth paste into 2 cups water (1 cup for 2-person portions).
b. Add the quinoa and bring to a boil. Cook for 10 minutes.
c. Add frozen edamame. Cover and cook for 5 more minutes or until the broth is absorbed.

Assemble salad:
a. In a bowl, mix together the cooked quinoa, carrots (shred), red cabbage (shred), cucumber (¼" dice), red onion (¼" dice) and bell pepper (¼" dice). Add ½ tsp salt.
b. Pour the Thai peanut dressing over the salad and fold to coat evenly.

Serve:
a. Divide salad into bowls.
b. Garnish with green onion (thinly slice) and crushed peanuts. Enjoy!
Chef's notes
For an added textural element, you can add some rice noodles to this salad.
