Teriyaki Chicken Stir-Fry
A salty-sweet teriyaki sauce coats tender pieces of chicken and a medley of seasonal vegetables, all over a bed of fragrant jasmine rice.

Prep ahead (optional)
a. Cut carrots into matchsticks or ¼”-thick coins. b. Trim sweet pepper stem & seeds, cut ¼”-thick slices. c. Remove cremini mushroom stems; cut caps in ¼”-thick slices. d. Remove green bean stem ends; snap beans into bite-sized pieces. e. Mince garlic.
Instructions

Cook jasmine rice:
a. Add 2 cups water (1 cup for 2-person portion) to medium saucepan and bring to a boil over medium-high heat.
b. Add jasmine rice to boiling water; stir immediately.
c. Reduce heat to low, cover, and cook until al dente, about 15 minutes.

Cook teriyaki chicken stir-fry:
a. Chop chicken tenders into 1” pieces. Season with ½ tsp salt.
b. In large sauté pan over medium-high heat, add 2 tsp olive oil.
c. Add chicken tender pieces; cook until golden about 3-4 minutes.
d. Add garlic (mince), carrots (matchsticks or ¼”-thick coins), mushrooms (remove stems, ¼”-thick slices), green beans (remove stem ends, snap into bite-sized pieces), and sweet peppers (trim stem & seeds, ¼”-thick slices). Stir to combine, and cook until mushrooms begin to caramelize and vegetables soften, about 2-3 minutes.
e. Add teriyaki sauce; stir to combine and cook until sauce thickens and chicken is cooked through, about 7-9 minutes.

Serve :
a. Divide jasmine rice among plates or bowls.
b. Top with teriyaki chicken stir-fry.
