Tempeh Burrito Bowl
Burrito bowls with crumbled tempeh seasoned with southwest spices, roasted sweet potatoes, creamy avocado, sweet corn, thinly sliced spicy jalapeños, and just a light drizzle of sour cream. And the option to add many more toppings of your choice.

Prep ahead (optional)
a. Husk sweet corn. b. Finely dice red onion and roma tomato. c. Medium dice yellow onion. d. Peel sweet potato, chop into ½" cubes. e. Pit avocado, thinly slice. f. Deseed jalapeno as desired, thinly slice. g. Juice lime h. Rough chop cilantro.
Instructions

Roast sweet corn and sweet potatoes:
a. Preheat oven to 400º and grease a baking tray with oil.
b. Add the sweet potatoes (peel, chop into ½" cubes) to a bowl along with ½ tbsp olive oil and ¼ tsp salt. Toss to coat.
c. Brush the sweet corn (husk) with olive oil.
d. Add the sweet potatoes and sweet corn to the baking tray and roast in oven for 20 minutes or until sweet potato is tender and corn is lightly charred, stirring once halfway through the cook. Remove from tray and set aside.

Meanwhile, cook long grain rice:
a. In medium saucepan over medium-high heat, add 2 cups water (1 cup for 2-person portion) and ¼ tsp salt. Cover and bring to a boil.
b. Add long-grain rice; stir immediately. Reduce heat to low, cover, and cook until tender, about 12-15 minutes.

While the rice and veggies cook, cook the tempeh:
a. Slice tempeh into 2" strips.
b. Heat 1 tbsp olive oil in a skillet. Add the yellow onion (thinly slice) and cook for 3 minutes, or until onions are translucent.
c. Add the tomato paste, burrito bowl spice mix, ½ tsp salt and 1 cup water (½ cup for 2 person portions). Stir to combine. Cook for 2 more minutes.
d. Add the tempeh. Continue cooking till the liquid reaches a boil. Reduce heat and continue simmering, stirring occasionally for 5 minutes, or until the sauce thickens.

While the tempeh simmers, prepare the salsa:
a. In a bowl, mix together the red onion (finely chop), roma tomatoes (finely chop), half the lime (juice) and ¼ tsp salt, Stir to combine. Keep aside.

Assemble bowls and serve:
a. Divide rice into bowls. Top with seasoned tempeh, roasted sweet potatoes, roasted sweet corn (remove kernels from cob), and avocado (pit, thinly slice). Drizzle the remaining lime (juice) over.
b. Garnish bowls with jalapeno (Optional. deseed as desired, thinly slice), cilantro (rough chop) and corn chips (crush). End with a drizzle of the sour cream. Enjoy!

You can add any of these toppings to the bowl - Shredded cheese, Toasted nuts, Bell peppers (fresh, roasted, or grilled), Black beans, Green onions, Grilled zucchini.
