Sweet Potato and Kidney Bean Hotpot

Prep ahead (optional)
a. Medium dice yellow onion. b. Cut bell pepper and sweet potato into 1" pieces. c. Rough chop roma tomatoes, preserve juices. d. Zest lemon, juice. e. Deseed jalapeno as desired, mince. f. Mince garlic. g. Finely chop cilantro.
Instructions

Cook the hotpot:
a. Heat 1 tbsp olive oil in a large pot. Add the yellow onion (medium dice) and garlic (mince). Saute for about 5 minutes, or until onions have softened.
b. Add the hot pot spice mix and saute for 2 more minutes.
c. Add the roma tomatoes (rough chop) with juices, vegetable broth paste and 1 cup water (½ cup for 2 person portions). Stir well to mix.
d. Add the sweet potato (cut into 1" pieces), bell pepper (cut into 1" pieces) and jalapeno (Optional. deseed as desired, mince). Bring to a boil. Reduce heat, cover and cook, stirring occasionally, for about 20 minutes, or till the sweet potatoes are mushy. Note: This would be the right time to start the rice - step 2.
e. Add the kidney beans and cook for 5 more minutes, stirring occasionally. Remove from heat and stir in the lemon (juice).

Meanwhile, cook the rice:
a. In medium saucepan over medium-high heat, add 2 cups water (1 cup for 2-person portion) and ¼ tsp salt. Cover and bring to a boil.
b. Add long-grain rice; stir immediately. Reduce heat to low, cover, and cook until tender, about 12-15 minutes.

Serve:
a. In a small mixing bowl, mix together the lemon zest and cilantro (finely chop).
b. Divide rice amongst bowls. Top with sweet potato and kidney bean hotpot. Garnish with the cilantro mixture. Enjoy!
Chef's notes
To swap the carbohydrates in the rice for protein, use quinoa instead of the rice.
