Sticky Tofu Fried Rice
This tofu fried rice is a surefire favorite at the dinner table with its gingery flavor rooted in Chinese influences but with a smack here and a dab there of other Asian cuisines too.

Prep ahead (optional)
a. Thinly slice yellow onion, green onion and chives. b. Slice zucchini in half lengthwise, cut ½" thick half moons. c. Peel carrots, chop into matchsticks. d. Stack Thai basil leaves, roll lengthwise and slice into thin strips. e. Mince garlic. f. Grate ginger.
Instructions

Cook jasmine rice:
a. In a medium saucepan, bring 2 cups water (1 cup for 2-person portion) to a boil over high heat.
b. Add ½ tsp salt and jasmine rice. Return to boiling, then reduce heat to low and cook, covered, until tender, about 15-20 minutes.

Cook fried rice:
a. In a large saute pan, heat 1 tbsp sesame oil (or olive oil). Add garlic (mince) and ginger (grate). Saute for 2 minutes.
b. Add yellow onion (thinly slice). Saute till onion is transparent.
c. Add tofu (drain, chop ½" pieces) and lightly stir-fry, taking care not to break the tofu.
d. Add the zucchini (slice into half lengthwise, cut ½" half moons) and carrot (peel, chop into matchsticks). Saute for 5 minutes.
e. Add half of the fried rice sauce and stir-fry for 1 more minute.
f. Add the jasmine rice, edamame and remaining fried rice sauce. Cook for 2-3 minutes.

Serve:
a. Divide fried rice amongst plates.
b. Garnish with chives (thinly slice), green onion (thinly slice and Thai basil (stack up, roll lengthwise, slice into thin strips). Enjoy!
