Sicilian Salmon and Cauliflower Bake
This meal brings home the simple, but elegant flavors of Mediterranean, with lemon, parsley and capers.

Spice mix
Granulated Garlic
1/2 0.25 teaspoon
Dried oregano
1/4 0.125 teaspoon
Dried thyme
1/4 0.125 teaspoon
Black pepper
1/4 0.125 teaspoon
Prep ahead (optional)
a. Chop cauliflower into bite-sized florets. b. Finely chop red onion, roma tomatoes and parsley. c. Slice zucchini into ½" thick coins. d. Divide lemon into 2 parts. Juice 1 part and slice the other into wedges.
Instructions

Cook the rice:
a. In medium saucepan over medium-high heat, add 2 cups water (1 cup for 2-person portion) and ¼ tsp salt. Cover and bring to a boil.
b. Add long-grain rice; stir immediately. Reduce heat to low, cover, and cook until tender, about 12-15 minutes.

Meanwhile roast the cauliflower:
a. Preheat oven to 400°.
b. In a bowl, add the cauliflower (chop bite sized florets), 1 tbsp olive oil, ½ tsp salt and half of the Sicilian bake spice mix. Toss to coat.
c. Grease a large baking tray. and add the cauliflower to one side of it. Bake for around 15 minutes or until browned.

Prepare the salsa:
a. Heat a small saute pan and add the sliced almonds. Toast for about a minute. Watch closely.
b. In a bowl, mix together the red onion (finely chop), tomato (finely chop), golden raisins, toasted almonds, capers, parsley (finely chop), the juice of one lemon (half a lemon for 2 person portions), ½ tsp salt ¼ tsp sugar and ½ tbsp olive oil.

Cook the salmon:
a. Season the salmon with ½ tsp salt and the remaining Sicilian bake spice mix.
b. Remove the baking tray from the oven, turn over the cauliflower and add the salmon and zucchini (slice ½" thick coins) to the other side of the tray.
c. Cook for another 8 minutes or till salmon is cooked.

Serve:
a. Divide rice into plates. Add salmon and roasted vegetables to the side. Top salmon with a heap of the salsa.
b. Garnish with lemon wedges and serve.
Chef's notes
If you want, you can skip the rice and add some root vegetables like beets, potatoes etc. to the roast.
