Sesame Veggie Noodle Bowl
This salty-sweet recipe could rank a close second to spaghetti on your list of noodle favorites. We added Chinese looooooooooong beans along with sweet carrots, corn, and edamame for muscle-building power.

Prep ahead (optional)
a. Husk corn and cut kernels from cob. b. Snap stem end off long beans, then snap beans into 2” pieces. c. Peel carrots; continue using vegetable peeler to cut ribbons.
Instructions

Cook brown rice noodles:
a. In large saucepan over high heat, add 8 cups water. Cover and bring to a boil.
b. Add brown rice noodles, stir immediately.
c. Cook, uncovered, stirring occasionally, until al dente, about 10 minutes. Be careful not to over cook; they will continue to cook in stir-fry.
d. Drain and set aside.

Stir-fry vegetables:
Tip: Don't begin this step until noodles are halfway through cooking.
a. In large sauté pan over medium-high heat, add 2 tsp olive oil.
b. Add Chinese long beans (snap stem end, then snap beans into 2” pieces) and stir-fry until they blister slightly. Add ½ cup water; steam long beans until fork-tender but not mushy and the water dissipates, about 2-3 minutes.
c. Add carrots (use vegetable peeler to cut ribbons), corn (husk, cut kernels from cob), and edamame. Toss to combine; cook about 2 minutes.
d. Add brown rice noodles and sesame stir-fry sauce. Toss to combine. Cook until sauce thickens, about 5 minutes.

Serve:
a. Divide sesame noodles among bowls.
b. Garnish with sesame seeds. Note: Toasting sesame seeds increases their flavor punch exponentially. Add them to a small, dry sauté pan over high heat. With the pan constantly moving, toast until golden. Watch closely! They can burn in a blink. Enjoy!

For more protein heft, the addition of sautéed chicken or beef strips would be delicious with the sesame stir-fry sauce.
