Sesame Fish Stir-Fry
This sticky sesame sauce has just enough sweetness from local honey. We balanced out the sauce with lots of vegetables and brown rice for an extra dose of fiber and nutritious, earthy goodness.

Prep ahead (optional)
a. Snap stem ends off of green beans and then snap or chop bite-sized. b. Peel carrots and slice into ¼”-thick coins. c. Chop broccoli florets bite-sized. Dice the stems. d. Trim stem ends of peppers and slice into rings. e. Mince garlic.
Instructions

Cook brown rice:
a. In a medium saucepan over medium-high heat, bring 1½ cups of water (¾ cup for 2-person portion) to a boil.
b. Add brown rice to a colander and rinse.
c. Add brown rice and ¼ tsp salt to boiling water.
d. Return water to boiling; immediately reduce heat to low, cover, and cook until al dente, about 30 minutes.
e. Turn off heat. Let stand, covered, until ready to serve.

Cook mahi mahi and vegetables:
a. Cut mahi mahi into bite-sized pieces and season with ½ tsp salt. Add 2 tbsp cornstarch to a plate or bowl and toss mahi mahi to coat.
b. In a large sauté pan over medium-high heat, add 2 tsp olive oil. Add mahi mahi and sear until golden, about 3-4 minutes. Remove from pan and set aside.
c. If pan is dry, add another 2 tsp olive oil. Add garlic (mince), carrots (peel, ¼”-thick coins), green beans (snap bite-sized), broccoli (florets chop bite-sized, dice stems), and sweet peppers (slice into rings). Stir-fry until garlic is fragrant, about 3 minutes.
d. Add seared mahi mahi to pan. Toss to combine.
e. Add sesame sauce and cook until sauce thickens, veggies are tender without being mushy, and fish is cooked through, about 10-12 minutes.

Serve:
a. Divide brown rice among plates or bowls.
b. Add sesame fish with vegetables on top of or alongside rice.
c. Garnish with sesame seeds.

This sesame sauce can be used on beef, chicken, or tofu for the vegetarians in the crowd.
