Salmon Pasta Bake with Pesto
This meal celebrates salmon with our in-house pesto and rich cream cheese. The crispy brown crust is the proverbial icing on the cake.

Prep ahead (optional)
a. Chop broccoli into bite-sized florets. b. Slice zucchini lengthwise; cut into ½" thick half-moons. c. Chop lettuce mix bite-sized. d. Thinly slice red onion. e. Slice cucumber into thin coins. f. Halve cherry tomato. g. Juice half the lemon. Slice half into wedges for serving.
Instructions

Cook the salmon and tomatoes:
a. Set oven to broil.
b. Season salmon with ½ tsp salt.
c. Arrange the cherry tomatoes (halve) and the salmon on a baking tray and drizzle 1 tbsp olive oil over it.
d. Grill for 10 minutes or until salmon is cooked through and tomatoes are juicy.

Meanwhile, cook the pasta:
a. Boil 8 cups of salted water (4 cups for 2 person portions) in a pot. Add the quinoa pasta once the water is at a rolling boil. Stir briskly. Cook on high heat till it returns to a boil.
b. Add the broccoli (chop bite-sized florets) and zucchini (slice lengthwise; slice into ½" thick half-moons). Reduce heat to low and continue to cook, stirring occasionally, for 5 minutes, or till the pasta is just short of al-dente consistency.
c. Drain, reserving a cup of the pasta water, and rinse with cold water. Drizzle a few drops of olive oil on the pasta and toss to coat.

Prepare the bake:
a. Preheat oven to 380°.
b. Season the breadcrumb mix with salt.
c. Flake the salmon with a fork.
d. In a large bowl, mix together the cream cheese, spinach and basil pesto, grilled cherry tomatoes along with enough of the reserved pasta water to bring it to a double cream consistency. Add the flaked salmon and the pasta with broccoli and zucchini to this mix.
e. Add the mixture to a baking tray and top with the breadcrumb mix. Drizzle 1 tbsp olive oil on top. Bake for about 10-12 minutes or until the breadcrumb mix is golden brown.

Meanwhile, assemble the salad:
a. In a bowl, mix together the lettuce mix (chop bite-sized), red onion (thinly slice) and cucumber (slice into thin coins). Season with salt and add the juice of half a lemon. Toss to coat.

Serve:
a. Divide salmon and pasta bake amongst plates. Garnish with lemon wedges. Serve salad alongside.
Chef's notes
The bake mix can be prepared ahead of time and refrigerated before baking for upto 24 hours. Bake for an additional 5 minutes if refrigerated.
