Power Bowl with Superfoods
This grain bowl is filled with nutrient heavy-hitters including quinoa and kale, broccoli, and shredded brussels sprouts. We added a superfood vinaigrette with chia seeds that's sweetened with maple syrup — so good and so good for you.

Prep ahead (optional)
a. Cut out kale stems and ¼” dice; tear leaves bite-sized. b. Trim stem ends off brussels sprouts; thinly slice. c. ¼” dice broccoli stems; chop florets bite-sized. d. ¼” dice yellow onion. e. Mince garlic.
Instructions

Cook quinoa:
a. In medium saucepan, add quinoa + bay leaf, 2 cups water (1 cup for 2-person portion), and 1 tsp salt. Bring to a boil over high heat.
b. Immediately reduce heat to medium; cook uncovered until moisture is absorbed, about 10 minutes.
c. Cover and set aside to steam for 5 minutes. Fluff with fork.

Meanwhile, prep fresh vegetables:
a. Add chia seeds to superfood vinaigrette; shake vigorously.
b. In medium bowl, add curly kale leaves (tear bite-sized) and brussels sprouts (thinly slice). Add half of the superfood vinaigrette; toss to coat. Set aside to soften and marinate.

Saute vegetables:
a. In large sauté pan over high heat, add almond slices; toast until golden and fragrant, about 1-2 minutes. Watch closely! Remove from pan and set aside.
b. In same sauté pan over medium-high heat, add 1 tbsp olive oil. Add garlic (thinly slice), yellow onion (¼” dice), kale stems (¼” dice), and broccoli stems (thinly slice or ¼” dice); cook until onion is translucent, about 2-3 minutes.
c. Add broccoli florets (bite-sized); sauté until vegetables are just fork-tender and still bright green, about 3 minutes.

Serve:
a. Divide quinoa among bowls.
b. Top with marinated kale and brussels sprouts; serve sautéed vegetables alongside. Drizzle with remaining superfood vinaigrette.
c. Garnish with toasted almonds. Pour the wine, and toast to good, local food and good health!
Chef's notes
To keep things interesting and in keeping with the winter season, we kept some of the veggies fresh and cooked others. If you don’t feel like cooking, it’s a warm day, or you just prefer the crunch, all of the vegetables (save garlic and onions) can be eaten raw, tossed with the vinaigrette, and served on top of the quinoa. Use the garlic and onion in the quinoa: Heat 1 tbsp olive oil on medium heat and sweat the garlic and onions. Add quinoa and 2 cups water. Follow directions from there.
