Portuguese Mahi Mahi and Rice
A smoky and tangy bell pepper marinade is the star of this Portuguese style roasted fish meal. Colorful rice studded with a medley of vegetables amps up the yum quotient.

Prep ahead (optional)
a. Husk corn, remove kernels from cobs. b. Peel carrots, ¼" dice. c. Snap ends off green beans, chop into ¼" pieces. d. Quarter bell pepper lengthwise, trim off seeds. e. Divide lemon into 2. Juice half, slice the remaining into wedges for serving. f. Mince garlic. g. Rough chop cilantro.
Instructions

Prepare the marinade and marinate mahi mahi (prepare a day ahead, ideally):
a. Set oven to broil.
b. Line a small baking tray with foil. Add red bell pepper (quarter lengthwise, trim off seeds) skin side up to the tray. Cook in oven until charred and tender, about 5 minutes. Set aside to cool for 10 minutes.
c. Remove skin from bell pepper and compost. Blend together the bell pepper, juice from half the lemon, garlic (mince), Portuguese spice mix and 1 tbsp olive oil in a blender until smooth.
d. In a bowl, add the mahi mahi, the blended marinade and ½ tsp salt. Coat the marinade on to the fish well. Refrigerate for at least 1 hour, overnight if time permits.

Cook the rice:
a. In medium saucepan, over medium-high heat, add 2 cups water (1 cup for 2 person portions) and ½ tsp salt. Cover and bring to a boil.
b. Add brown rice. Stir and reduce heat to medium. Cover and cook until tender, about 30 minutes. Add the carrot (peel, ¼" dice) for the last 5 minutes; the corn (husk, remove kernels from cob) and green beans (snap ends, chop into ¼" pieces) for the last 2 minutes.

Meanwhile, cook the mahi mahi:
a. Preheat oven to 400°.
b. Heat 1 tbsp olive oil in an oven-safe pan and add the marinated mahi mahi. Sear for 2 minutes each side. Add the pan to the oven and cook for 8-10 minutes, or until the fish is cooked through. Remove from oven and set aside to rest for 5 minutes. Chop into 1" pieces.

Serve:
a. Divide rice amongst plates. Top with mahi mahi. Garnish with cilantro and the remaining lemon (slice into wedges). Enjoy!
Chef's notes
Prepare the marinade a day ahead of time and marinate the fish overnight, if possible, for best results.
