Pork Lo Mein
Who needs Chinese takeout when you can make your very own version of pork lo mein using locally grown produce right in the comfort of your kitchen?

Prep ahead (optional)
a. Cut broccoli into bite-sized florets. b. Trim stem and seeds from bell pepper; cut ¼”-thick slices. c. ¼” dice yellow onion. d. Cut out kale stems, stack and roll leaves, slice into ribbons. e. Remove cremini mushroom stems; cut ½”-thick slices. f. Remove stem ends of green beans; snap beans bite-sized. g. Mince garlic. h. Rough chop cilantro stems and leaves.
Instructions

Start lo mein noodles:
a. In large saucepan over high heat, add 4 cups water (2 cups for 2-person portion). Cover and bring to a boil.
b. Add brown rice noodles to boiling water. Stir immediately to separate noodles.
c. Cook until tender about 7-10 minutes. Drain and set aside.

Meanwhile, stir-fry pork and vegetables:
a. Cut pork chops into ½”-1” pieces. Season with ¼ tsp salt.
b. In large saute pan over medium high heat, add 1 tbsp olive oil.
c. Add pork and saute for about 4 minutes.
d. Add garlic (mince), onion (¼” dice), green beans (remove ends, snap bite-sized), broccoli (chop bite-sized florets), bell peppers (remove stem & seeds, cut in ¼”-thick slices), and cremini mushrooms (remove stems, slice caps). Cook 2-3 minutes, stirring constantly.
e. Add kale (remove stems, stack & roll leaves, slice into strips). Stir-fry just until greens wilt, about 2 minutes.
f. Add brown rice noodles.
g. Add lo mein sauce; toss to coat all ingredients. Continuously stir and cook until sauce thickens and warms through, about 2-3 minutes.

Serve:
a. Divide pork lo mein among plates or bowls and garnish with cilantro (mince stems & leaves). Enjoy!
Chef's notes
The water will take what feels like forever to boil. Covering it will help though. To keep the timing right, prep vegetables and pork while waiting for water to boil, and start the stir-fry only after getting the noodles in the boiling water. About the time you get to the step for adding the noodles to the stir-fry, they will be ready!
