Persian Glazed Tofu with Jeweled Rice
Agave, cinnamon, turmeric, hints of citrus from sumac — this Persian glaze is full of flavor. We paired it with roasted cauliflower and jeweled rice, which gets its name from pretty dried apricots and toasted pistachios.

Prep ahead (optional)
a. Cut cauliflower into bite-sized florets; ¼” dice any edible stem. b. Peel carrots; ¼” dice. c. ¼” dice yellow onion. d. Mince cilantro (stems & leaves) and mint (leaves). e. Mince 2 garlic cloves and crush 2 cloves with side of knife (1 clove each for 2-person portion).
Instructions

Prep:
a. Drain and rinse tofu. With paper towels, press out as much water as possible. Cut tofu into 1” cubes.
b. Add to medium bowl. Season with ½ tsp salt. Toss to combine. Add wet Persian spice mix; toss to coat and set aside.
c. In large sauté pan over high heat, add pistachios (rough chop). Toast about 1-2 minutes. Set aside.

Cook rice:
a. In medium saucepan over medium-high heat, add 2 tsp olive oil, yellow onion (¼” dice), half the garlic (mince), carrots (peel, ¼” dice), and ¼ tsp salt. Cook until onion is translucent, about 2 minutes.
b. Stir in basmati rice. Add 2 cups water (1 cup for 2-person plan), cover, and bring to boil. Immediately turn heat to low. Cook until tender, about 18 minutes.
c. Add dried apricots (small dice). Set aside covered for 5 minutes.

Cook cauliflower and tofu:
a. To medium bowl, add cauliflower (bite-sized florets, ¼” dice edible stems), remaining garlic (smash with side of knife), ¼ tsp salt, and dry Persian spice mix. Toss to coat.
b. In same large sauté pan over medium heat, add 2 tsp olive oil. Add cauliflower and garlic mixture; cook until garlic is fragrant and starting to brown. Cover and cook, stirring occasionally, until fork tender, about 4-5 minutes. Set aside.
c. In same pan, add 2 more tsp olive oil and marinated tofu. Cook until caramelized on all sides, about 3-4 minutes.

Serve:
a. Divide rice among plates and garnish with toasted pistachios, cilantro (mince leaves and stems), and mint (mince leaves).
b. Top with tofu and cauliflower.
Chef's notes
For meat eaters, chicken thighs or drumsticks are a perfect match with the glaze.
