Pan-fried Pork Chops with White Beans and Tomato Salsa
This quick and easy recipe features local pork with a toothy white bean and tomato salsa.

Pork chops, boneless
1 0.5 lb
Pantry items
Olive oil
2 1 tablespoon
Sea salt
1 0.5 teaspoon
Spice mix
Ground celery seed
1/2 0.25 teaspoon
Dill, dried
1/2 0.25 teaspoon
Granulated Garlic
1/2 0.25 teaspoon
Parsley, dried
1/2 0.25 teaspoon
Prep ahead (optional)
a. Thinly slice red onion. b. Finely chop roma tomatoes. c. Peel cucumber, finely chop. d. Chop lettuce mix bite-sized. e. Juice 1 lemon and slice the other into wedges (½ lemon each for 2-Person portions).
Instructions

Cook the pork:
a. Season pork chops with ½ tsp salt and celery and dill mix.
b. Heat 1 tbsp olive oil in a pan. Add the pork. Cook for 4 minutes on each side or until pork is cooked through.
c. Cover with foil and set aside to rest.

Prepare the salsa:
a. In a bowl, mix together cannellini beans (drain), red onion (thinly slice), roma tomato (finely chop), lettuce mix (chop bite sized) and cucumber (peel, finely chop).
b. Add juice of 1 lemon (½ lemon for 2-person portions), 1 tbsp olive oil and ½ tsp salt. Toss to combine.

Serve:
a. Divide pork amongst plates. Serve white bean and tomato salsa alongside.
b. Garnish with remaining lemon (slice into wedges). Enjoy!
