Pan-fried Chicken with Apple Salad

Granulated Onion
1/4 0.125 teaspoon
Dried oregano
1/4 0.125 teaspoon
Dried thyme
1/4 0.125 teaspoon
Black pepper
1/8 0.065 teaspoon
Apple Salad Dressing
Olive oil
3 1.5 tablespoon
Apple cider vinegar
2 1 tablespoon
Onion powder
1/2 0.25 teaspoon
Dijon mustard
1 0.5 teaspoon
Prep ahead (optional)
a. Cut apples into ½" thick wedges. Remove seeds. b. Pit avocado, thinly slice. c. Chop lettuce mix bite-sized. d. Rough chop mint leaves. e. Juice half the lime, slice the other half into wedges for serving.
Instructions

Cook the chicken:
a. In a bowl, add the chicken thighs, pan-fry spice rub and ½ tsp salt. Coat evenly on the chicken.
b. Heat 1 tbsp olive oil in a saute pan. Add the chicken. Cook for 4-5 minutes on both sides or until chicken is cooked.
c. Set aside to rest for 5 minutes. Chop into bite sized pieces.

Assemble salad.:
a. In a small saute pan, add the pecans. Toast for 1-2 minutes, stirring occasionally for even roasting. Watch closely or they might burn.
b. In a bowl, mix together the apple (cut into ½" thick wedges, remove seeds), avocado (pit, thinly slice), lettuce mix (chop bite-sized), mint (rough chop leaves), toasted pecans, dried cranberries, juice of half the lime and ½ tsp salt. Add apple salad dressing. Toss well to coat.

Serve:
a. Divide salad amongst plates. Top with chicken and garnish with lime wedges. Enjoy!

This salad tastes just as great with BBQ shrimp or smoked trout.
