Orange Mahi Mahi
Mahi mahi cooked in orange sauce, served with rice. We jazzed up our variation on this classic Chinese-American takeout with a bunch of seasonal vegetables.

Prep ahead (optional)
a. Rough chop swiss chard leaves; mince stems. b. Thinly slice shiitake & cremini mushroom caps; compost tough stems. c. Cut broccoli into long florets with stem. d. ¼” dice yellow onion. e. Thinly slice garlic.
Instructions

Cook rice:
a. To a medium saucepan over medium-high heat, add 1¾ cups water (scant 1 cup for 2-person portion); cover and bring to a boil.
b. Stir in jasmine rice. Cover and cook 20 minutes until tender.

Meanwhile cook orange mahi mahi:
a. Chop mahi mahi bite-sized. Season with ½ tsp salt.
b. Add 2 tbsp cornstarch (1 tbsp for 2-person portions) to Asian orange marinade (Red dot) and add mahi mahi pieces to it. Coat evenly.
c. Heat 1 tbsp sesame oil (or olive oil) in a large saute pan. Remove mahi mahi from marinade with a slotted spoon and add to pan. Cook evenly on all sides for 5 minutes or until fish is browned.
d. Add 1 tbsp cornstarch (½ tbsp for 2-person portion) to Asian orange sauce and mix well. Add the sauce to the pan and bring to a boil, stirring continuously until sauce thickens. Remove from heat.

Saute vegetables:
a. Heat 1 tbsp sesame oil in a second sauté pan over medium-high heat. Add yellow onion (¼” dice), swiss chard stems (mince), and garlic (thinly slice). Add ½ tsp salt. Cook until onion is translucent, 2 minutes.
b. Add broccoli (cut long florets with stem). Sauté 2-3 minutes.
c. Add shiitake and cremini mushrooms (thinly slice caps, compost tough stems). Caramelize, 1 minute.
d. Add swiss chard leaves (rough chop). Sauté until wilted, 1-2 minutes.

Serve:
a. Divide rice into plates. Top with orange mahi mahi.
b. Garnish orange mahi mahi with sesame seeds and serve with sauteed vegetables on the side. Enjoy!
Chef's notes
Add a dash of orange zest to the Asian orange sauce for a bolder flavor.
