One Pot Cilantro Lime Fish Rice
The fresh flavors of lime and cilantro compliment the sharp tones of Chinese five spice in this one pot rice meal.

Prep ahead (optional)
a. Medium dice yellow onion, roma tomatoes, carrots and celery. b. Finely chop sweet peppers and cilantro. c. Juice lime. d. Mince garlic.
Instructions

Cook the mahi mahi:
a. Chop mahi mahi into 1" pieces. Season with the Chinese five spice and ½ tsp salt.
b. Heat 1 tbsp sesame oil (or olive oil) in a pot. Add the mahi mahi. Cook for 3-5 minutes or until mahi mahi is almost cooked through, stirring regularly.
c. Remove from pot and keep aside.

Cook the rice:
a. Heat 1 tbsp sesame oil (or olive oil) in the same pot. Add the yellow onion (medium dice), celery (medium dice) and carrots (medium dice). Saute for 3-5 minutes or until onions have softened.
b. Add the garlic (mince) and saute for 1 more minute.
c. Add the vegetable broth paste, 2 cups water (1 cup for 2 person portions), lemon (juice), roma tomato (medium dice) and ½ tsp salt. Stir well to mix. Bring to a boil.
d. Add the jasmine rice. Cover and cook for 12 minutes on low heat. Add the mahi mahi, sweet peppers (finely chop) and half the cilantro (finely chop). Stir well to combine. Cook for another 5-7 minutes, or until rice is cooked.

Serve:
a. Divide cilantro lime fish rice amongst bowls. Garnish with remaining cilantro (finely chop). Enjoy!
Chef's notes
Vegetarians can sub tofu for the mahi mahi. This recipe also works well with chicken.
