Mushroom & Spinach Flatbread Pizza with Cilantro Pesto
Mushrooms and spinach make a perfect match, and when paired with cilantro pesto, they are made all the better. We added peppery red onion, slabs of beefsteak tomato, and, of course, tons of gooey mozzarella cheese to make this quick and easy flatbread pizza a guaranteed crowd-pleaser.

Prep ahead (optional)
a. Thinly slice red onion. b. Cut beefsteak tomato into ½”-thick slices. c. Cut cremini mushrooms into ¼”-thick slices. d. Rough chop spinach. e. Thinly slice or mince garlic.
Instructions

Lightly toast naan:
a. Preheat oven to 450°.
b. Add naan to a large baking sheet. Toast in oven until slightly crispy, 2-3 minutes. Set aside.

Cook vegetables:
a. Heat 1 tbsp olive oil in a large sauté pan over medium heat. Add red onion (thinly slice), garlic (mince or thinly slice), and mushrooms (¼”-thick slices). Cook until mushrooms caramelize, 3-4 minutes; remove from pan.
b. Add spinach (rough chop) to the same pan, cook until slightly wilted; remove from heat.

Assemble and bake pizzas:
a. Layer mozzarella, cooked vegetable mix, spinach, and tomatoes (½”-thick slices) on top of naan. Season tomatoes with pinches of salt and black pepper.
b. Bake until mozzarella melts, about 4-6 minutes; watch closely!

Serve:
a. Top each pizza with a dollop of cilantro pesto and gently spread.
b. Cut into easy-to-hold pieces. Enjoy!

A pinch of red pepper flakes or a grind or two of black pepper would add heat to this recipe.
