Moroccan Chickpea Leblebi
Leblebi is a traditional Moroccan chickpea stew. We gave it a delish twist by adding a homemade Harissa. Accompanied with flatbread for dipping.

Prep ahead (optional)
a. Finely dice yellow onion, celery and carrots. b. Rough chop roma tomatoes, preserve juices. c. Medium dice zucchini. d. Finely chop cilantro.
Instructions

Cook the leblebi:
a. Heat 1 tbso olive oil in a large pot. Add the yellow onion (finely dice), celery (finely dice) and ¼ tsp salt. Stir for a minute, then cover and cook for 2-3 minutes. Stir again, scraping any brown bits. Repeat this cycle till the onion and celery are completely tender and mushy, about 12-15 minutes.
b. Add the carrot (finely dice), zucchini (medium dice) and the leblebi spice mix. Saute for 1-2 minutes, or until fragrant.
c. Add the tomato paste and continue to saute for 2 more minutes. The mixture should have turned a deep brown by now.
d. Add the roma tomatoes (rough chop) with juices. Cover and continue cooking, stirring occasionally, for 5-7 minutes or until the tomatoes have softened.
e. Add the chickpeas (drain, rinse) and 6 cups water (3 cups for 2 person portions). Season with salt to taste. Stir to combine well. Cover and cook over low heat, stirring occasionally, for 10 minutes.
f. Use an immersion blender to lightly puree the leblebi. Cover and cook for 5 more minutes.

Meanwhile, toast the naan:
a. Set oven to broil and grease a large tray.
b. Lightly brush the naan with some olive oil and place on the tray. Add to oven and broil for 2 minutes.

Serve:
a. Stir in the harissa into the leblebi just before serving. Divide amongst bowls. Garnish with cilantro (finely chop). Serve naan alongside for dipping. Enjoy!
Chef's notes
Instead of grilling the flatbread as-is, you can brush them with olive oil and dab some zaatar spice mix (sumac, dried thyme, dried oregano, dried marjoram and black sesame seeds in equal proportions) over them before grilling.
