Moroccan Chickpea and Eggplant Stew
This stew takes a little longer than our usual recipes, but tastes more than worth the time. The warm notes of the spice mix combine beautifully with this tomato-forward stew featuring chickpeas, eggplants and potatoes.

Prep ahead (optional)
a. Chop eggplants and bell peppers into ¼" pieces. b. Score a ring around the potatoes, just deep enough to break the skin. c. Medium dice the yellow onion. d. Rough chop beefsteak tomato, reserve juices. e. Finely chop parsley. f. Mince garlic.
Instructions

Roast the eggplant and bell pepper:
a. Preheat oven to 400° and line a baking tray with paper.
b. In a bowl, mix together the eggplant (chop into ¼" pieces) and red bell pepper (chop into ¼" pieces) with 1 tbsp olive oil. Season with salt to taste. Toss to coat evenly.
c. Spread the veggies over the baking tray and roast for 25 minutes, flipping halfway through.

Meanwhile, par-cook the potatoes:
a. Place the potatoes (score a ring around them just deep enough to break the skin) in a large pot of cold water. Bring to a boil and reduce heat to medium. Cook for about 8 minutes, or until the potatoes are par-cooked.
b. Drain the potatoes and rinse with cold water. Peel off the skin and cut into ½" pieces. Set aside.

Cook the stew:
a. Heat 1 tbsp olive oil in the same pot. Add the yellow onion (medium dice) and garlic (mince). Saute for 3-4 minutes, or until onions are translucent.
b. Add the tomato paste and stir well until evenly distributed. Add the Moroccan spice mix and ½ tsp salt. Saute for 2-3 minutes, or until the spices release their fragrance.
c. Add the potatoes, chickpeas (drain, rinse) and beefsteak tomatoes (rough chop) with juices. Stir well to incorporate.
d. Add the vegetable broth paste and 2 cups water (1 cup for 2 person portions). Reduce heat, cover and cook for about 15 minutes, or until potatoes are fork tender.
e. Add the roasted eggplant and bell peppers. Cook for 5-7 more minutes, or until the tomatoes have broken down completely.

Serve:
a. Ladle stew into bowls. Garnish with parsley (finely chop). Enjoy!
Chef's notes
While the stew tastes excellent on its own, you can serve it with some bread for dipping or with some buttered rice as well.
