Miso Noodle Soup
This clean-eating soup is full of umami thanks to the miso base and soba noodles. We added greens and edamame to power up your new year.

Prep ahead (optional)
a. ¼” dice swiss chard stems; roll leaves and and thinly slice ribbons. b. Thinly slice green onions. c. Cut carrots into ¼”-thick half-moons. d. Thinly slice daikon radish into coins or matchsticks (julienne). e. ¼” dice yellow onion. f. Mince garlic.

Pull edamame from freezer:

Cook soba noodles:
a. In a large saucepan over medium-high heat, add 6 cups water. Cover and bring to a boil.
b. Add soba noodles and 1 tsp sesame oil or olive oil; stir to prevent sticking. Reduce heat to medium and cook until al dente, about 7-8 minutes.
c. Drain, rinse, and set aside.

Cook miso soup:
a. In a large saucepan over medium-high heat, add 1 tbsp sesame oil or olive oil. Add yellow onion (¼” dice), garlic (mince), swiss chard stems (¼” dice, reserve leaves), and carrots (¼”-thick half-moons). Cook until onion is translucent, about 2 minutes.
b. Add 4 cups water (2 cups for 2-person portion) and miso paste. Stir well to combine.
c. Reduce heat to low. Add edamame and swiss chard leaves (roll and thinly slice); simmer until carrots are fork-tender and edamame is warmed through, about 15-18 minutes.

Serve:
a. Divide soba noodles among bowls.
b. Ladle over miso broth.
c. Garnish with daikon radish (thinly slice or cut matchsticks) and green onion (thinly slice). Pour some sparkling wine for a delicious bubbly contrast and toast to the new year.
Chef's notes
To make a spicy miso broth, you can stir in spicy chili paste or garnish with slivered or finely minced jalapeno.
