Mediterranean Stuffed Chicken with Salad
Flavors of the Mediterranean in the stuffing are a perfect complement to the juicy chicken in this innovative and fun recipe. An equally quirky olive and orange salmon add a touch of freshness.

Orange Juice Vinaigrette
Olive oil
1/4 0.125 cup
Orange juice
3 1.5 tablespoon
White wine vinegar

Prep ahead (optional)
a. Thinly slice red onion and watermelon radishes. b. Rough chop spinach. c. Chop lettuce mix bite-sized. d. Peel orange, cut into segments.
Instructions

Prepare the stuffing:
a. Boil 3 cups water in a pan. Keep a bowl filled with ice water ready.
b. Once the water starts boiling vigorously, turn off the heat and add spinach (rough chop). Cover for about a minute and drain.
c. Transfer the spinach to the ice water bowl and leave there for a few minutes to allow the cooking to stop completely.
d. Meanwhile, in a bowl, mix together the sun-dried tomatoes (rough chop), artichoke hearts (rough chop), Mediterranean stuffing spice mix and salt to taste. Drain the spinach and add to the mixture. Crumble the feta cheese on top and mix well.

Cook the chicken:
a. Make a horizontal slice in the middle of the chicken thighs but do not cut all the way through.
b. Fill these pockets with the spinach stuffing.
c. Heat 1 tbsp olive oil in a saute pan. Carefully add the stuffed chicken. Cook for 4-6 minutes on each side or until chicken is cooked. Be careful with the stuffing while flipping it over.

Assemble the salad:
a. In a bowl, mix together the lettuce mix (chop bite-sized), red onion (thinly slice), watermelon radishes (thinly slice), oranges (peel, cut into segments) and kalamata olives (rough chop). Season with salt. Pour over the orange juice vinaigrette. Toss to coat evenly.

Serve:
a. Divide stuffed chicken amongst plates. Serve orange and olive salad alongside. Pour the wine and enjoy!
Chef's notes
How to segment an orange:Place orange with stem end parallel to cutting board. Slice off ends. Turn orange on flat end. Keeping knife between pulp and orange segment, carefully guide knife from top to bottom to cut away all the peel and pulp. Your reward -- beautiful orange jewels.
