Mediterranean Poached Mahi with Orzo
Mahi mahi is poached in a lemon-and-herb broth with a pretty medley of vegetables all on a bed of orzo.

Prep ahead (optional)
a. Chop arugula bite-sized. b. Peel carrots; ¼” dice. c. ¼” dice red onion. d. Slice lora bella tomatoes in half. e. Thinly slice or mince garlic. f. Cut one lemon in half and juice. Slice second lemon in wedges for garnish.
Instructions

Cook orzo:
a. In large saucepan, add 5 cups water and ½ tsp salt. Cover and bring to boil over high heat.
b. Add orzo; stir immediately. Reduce heat to medium; cook until tender, about 8-10 minutes. Drain and rinse with cool water. Add juice from ½ lemon and toss to avoid sticking.

Poach mahi mahi:
a. Dice mahi mahi into 1” pieces. Season with ½ tsp salt and ¼ tsp black pepper.
b. In large sauté pan over medium-high heat, add 2 tbsp olive oil. Add red onion (¼” dice), garlic (thinly slice or mince), ½ tsp salt, and Mediterranean herb mix. Cook until shallots are translucent, about 2-3 minutes.
c. Add carrots (peel, ¼” dice), 3 cups water (1½ cups for 2-person portion), and juice from other half of lemon. Reduce heat to medium and bring to low simmer, uncovered.
d. Reduce heat to low and add mahi mahi pieces; cook until opaque throughout, about 6 minutes.
e. Halfway through cooking mahi, add lora bella tomatoes (slice in half) and capers.

Serve:
a. Divide orzo among bowls or plates (make sure plates have enough of a lip to hold some broth). Top with arugula (chop bite-sized) — the heat from the broth will wilt it slightly.
b. Spoon over mahi with broth. Garnish with additional lemon juice if desired. Pour the wine and enjoy.
Chef's notes
If you aren't a fish fan, poaching chicken is another omni option. Vegetarians and vegans can skip the fish and replace it with vegan sausage or just keep it as a simple pasta and veggie dish.
