Loaded Vegan Mexican Sweet Potato Fries
In the spirit of Super Bowl food, may we present a big plateful of local sweet potato fries. We topped ours with black beans and all the beloved Mexican garnishes, including avocados, fresh romaine and cherry tomatoes, a drizzle of lime crema, and toasted pumpkin seeds.

Prep ahead (optional)
a. Pit avocados; thinly slice. b. Slice cherry tomatoes in rings. c. Thinly slice green onions. d. Thinly slice lettuce. e. Cut sweet potatoes into ¼” strips. f. ¼” dice ½ yellow onion. g. Slice lime into wedges. h. Rough chop cilantro stems and leaves. i. Mince garlic.
Instructions

Prep sweet potato fries:
a. Preheat oven to 475º. Line large baking sheet with foil. Add empty sheet to oven.
b. Add sweet potatoes (¼” strips) to large bowl and cover with cold water. Set aside.

Prep black beans:
a. In large saucepan or dutch oven over medium-high heat, add 2 tsp olive oil, ½ yellow onion (¼” dice), garlic (mince), 1 tsp salt, and half of boniatos spice mix. Cook until onion is translucent, about 2 minutes.
b. Add black beans (drain; rinse) and stir to combine.

Cook sweet potatoes:
a. Drain sweet potatoes. Add 1-2 tbsp olive oil, ½ tsp salt, and remaining boniatos spice mix. Toss to coat.
b. Carefully remove hot baking sheet from oven. Add sweet potatoes in even layer. Return to oven and bake until crispy, about 30 minutes.

Serve:
a. In small sauté pan over high heat, add pumpkin seeds. Stirring constantly, toast until golden, about 1-2 minutes. Watch closely!
b. Divide sweet potato fries among plates. Using a slotted spoon, top with cooked black beans.
c. Garnish with romaine lettuce (thinly slice), cherry tomatoes (slice in rings), avocado (pit, thinly slice), a drizzle of vegan lime crema, and toasted pumpkin seeds.
d. Serve with lime wedges on the side. Pour a beer and dig in!
