Lemon Rosemary Tofu Sandwich
Firm tofu steaks marinated in a citrusy lemon rosemary are tucked between chewy ciabatta and topped with chive aioli and all the traditional garnishes. Alongside you'll find caramelized roasted broccoli with garlic.

Prep ahead (optional)
a. Chop lettuce or leave whole for sandwich garnish. b. Cut broccoli into medium spears, including stem. c. Cut tomato into ¼” slices for sandwich garnish. d. Thinly slice red onion for sandwich garnish. e. Crush garlic but leave larger pieces as desired. f. Strip rosemary leaves from stem and finely mince. g. Finely mince chives.
Instructions

Bake tofu:
a. Preheat oven to 425º. Prep two baking pans (one small and one large) with olive oil.
b. Drain and rinse extra firm tofu. Using paper towels, press as much water out as possible. Portion tofu into ½”-1” thick “steaks.”
c. Season tofu steaks with a light drizzle of olive oil and ½ tsp salt. Add to large baking pan; bake for 12-15 minutes.
d. Meanwhile add rosemary (strip leaves from stem, finely mince) to lemon marinade. Shake vigorously to combine.
e. Remove tofu steaks, flip, and pour marinade over tofu. Return to oven and bake an additional 15 minutes.

Meanwhile, cook garlicky broccoli:
a. In medium saute pan over medium heat, add 1 tbsp olive oil. Add garlic and cook until golden, about 1-2 minutes. Add broccoli (medium spears, cut lengthwise), ¼ tsp salt, and pinch of black pepper. Toss to coat.
b. Add garlicky broccoli to the small baking pan and roast until tender and caramelized, about 5 minutes.

Serve:
a. Add chives (finely mince) to vegan aioli. Stir to combine.
b. Slice ciabatta lengthwise and toast or warm as desired. Slather with chive aioli. Add lemon rosemary tofu and garnish with romaine lettuce (chop or fold to fit sandwich), tomato (¼-½” slice), and ½ red onion slices (thinly slice).
c. Plate tofu sandwich and serve garlicky roasted broccoli alongside.
Chef's notes
For meat lovers, the lemon rosemary marinade works beautifully with salmon or chicken breast. And vegetarian or omni, if you're cutting back on carbs, you can slim this down by trading the ciabatta for a low car wrap.
