Lemon Herb Chicken with Veggies
A single tray bake featuring a colorful and nutritious mix of veggies and juicy chicken brightened up with a zesty lemon and herb marinade.

Prep ahead (optional)
a. Chop zucchini into ½" pieces. b. Quarter cremini mushrooms, compost tough stems. c. Halve cherry tomatoes. d. Slice bell peppers and sweet peppers into ¼" strips. e. Slice lemon into wedges. f. Finely chop parsley.
Instructions

Start the veggies:
a. Preheat oven to 400° and line a baking tray with paper.
b. In a bowl, mix together zucchini (chop into ½" pieces), cremini mushrooms (quarter, compost tough stems), cherry tomatoes (halve), bell peppers (slice into ¼" strips), sweet peppers (slice into ¼" strips) and 1 tbsp olive oil. Season with salt and black pepper to taste. Toss to coat.
c. Spread the vegetables on one half of the baking tray and add to oven. Cook for about 15 minutes before chicken is added.

Meanwhile, prep chicken:
a. Portion chicken thighs and add to a mixing bowl. Season with salt to taste. Pour half of the lemon herb marinade over the chicken and coat well. Set aside until it is ready to be added to the baking tray.

Cook chicken:
a. Remove baking tray from oven after the veggies have been cooking for 15 minutes. Add the chicken to the other side of the tray. Pour the remaining lemon herb marinade over the chicken and return to oven. Cook for 12-15 minutes or until chicken is cooked through.

Serve:
a. Divide chicken and veggies amongst plates. Garnish with lemon (slice wedges) and parsley (finely chop). Pour a glass of wine and enjoy!
Chef's notes
The parsley garnish can be swapped for cilantro, or thyme, or any fresh herb you may prefer.
