Korean BBQ Beef
Juicy top sirloin gets the treatment it deserves in this Korean street food inspired dinner. Instead of the traditional barbecue, we opted for a more convenient pan-sear method that does not take away from the taste.

Korean BBQ Marinade
Tamari
1/3 0.165 cup
Sesame oil
4 2 tablespoon
Apple sauce
1/4 0.125 cup
Minced Garlic
3 1.5 Clove
Onion powder
1 0.5 tablespoon
Gochujang
1 0.5 tablespoon
Brown sugar, dark

Prep ahead (optional)
a. Finely dice yellow onion. b. Peel cucumber (as desired) and carrots, cut into ¼" thick coins. c. Chop spinach bite-sized, or leave whole. d. Thinly slice green onion. e. Mince garlic.
Instructions

Prep:
a. Slice top sirloin against the grain, as thinly as possible.
b. In a bowl, season the top sirloin slices with ½ tsp salt and add the Korean BBQ marinade. Coat evenly and leave to marinate for at least 30 minutes, preferably overnight.

Cook jasmine rice:
a. To a medium saucepan over medium-high heat, add 1¾ cups water (scant 1 cup for 2-person portion); cover and bring to a boil.
b. Stir in jasmine rice. Cover and cook 20 minutes until tender.

Meanwhile, cook the beef:
a. Heat 2 tbsp sesame oil (or olive oil) in a large saute pan.
b. Add garlic (mince) and yellow onion (finely dice) to the pan and saute for 2 minutes.
c. Remove the top sirloin from the marinade and add to pan. Make sure not to crowd the pan.
d. Sear over medium-high heat, stirring regularly, until the beef is browned, about 7-8 minutes. Remove from heat.

Prepare banchan (side dish):
a. Fill a medium bowl with ice water.
b. Bring 4 cups of water to a boil in a saucepan. Add ½ tsp salt.
c. Add carrots (peel, slice into ¼" thick coins). Remove carrots from pan after 2 minutes and add to the bowl with ice water.
d. Add spinach (chop bite sized or leave whole) to pan. Remove after 1 minute and add to the bowl with ice water.
e. Drain out the ice water and add cucumber (peel as desired, slice into ¼" thick coins) to the bowl.
f. Pour over banchan sauce and toss to coat.

Serve:
a. Divide jasmine rice into plates. Top with seared beef.
b. Garnish with green onion (thinly slice) and sesame seeds. Serve with banchan on the side. Enjoy!
Chef's notes
Banchan is the name for traditional Korean side dishes. Instead of the banchan mentioned in the recipe, you can serve other banchan like kimchi, seasoned soybean sprouts, steamed eggplant etc.
