Jamaican Chicken Curry
Vibrant, ochre Jamaican curry differs from its Indian counterpart, thanks to a healthy dose of allspice; it's a bit soupier, too. Like South Asian takes, however, Jamaicans incorporate coconut milk, resulting in a silky, soupy curry.

Prep ahead (optional)
a. Finely chop yellow onion. b. Mince garlic and ginger root. c. Chop fingerling potatoes into ¼" coins. d. Deseed jalapeno as desired, finely dice. e. Rough chop cilantro.
Instructions

Cook the rice:
a. In medium saucepan over medium-high heat, add 2 cups water (1 cup for 2-person portion) and ¼ tsp salt. Cover and bring to a boil.
b. Add long-grain rice; stir immediately. Reduce heat to low, cover, and cook until tender, about 12-15 minutes.

Meanwhile cook the curry:
a. Chop chicken thighs into 1" pieces. Season with ¼ tsp salt.
b. Heat 1 tbsp oil in a saucepan. Add the yellow onion (finely chop), garlic (mince) and ginger root (mince). Saute for 5-7 minutes, or until onions are trasnparent.
c. Add the jerk spice mix. Cook for 1 more minute, or until spices are fragrant.
d. Add the chicken. Cook for 7 more minutes.
e. Add the fingerling potatoes (chop into ¼" coins) and cook for 3-5 minutes, or until chicken and potatoes are cooked though.
f. Add the coconut milk, Jamaican curry sauce, jalapeno (Optional; deseed as desired, mince), ¼ tsp salt and ½ cup water (¼ cup for 2 person portions). Mix well, cover and cook for 2-3 minutes.

Serve:
a. Divide rice amongst bowls. Top with Jamaican chicken curry. Garnish with cilantro (rough chop). Enjoy!

Caramelized sliced plantains are an excellent side to go with this curry.
