Honey Soy Cod Skewers

Prep ahead (optional)
a. Quarter red onion vertically. b. Trim bell pepper, cut into 1" pieces. c. Chop lettuce and arugula bite-sized. d. Juice lemon. e. Halve cherry tomatoes. f. Finely chop cilantro.
Instructions

Prep the cod:
a. Soak bamboo skewers in cold water for 30 minutes.
b. Cut cod into 1" pieces and add to a bowl. Season with ½ tsp salt. Pour the honey soy marinade on top. Let it marinate for 10 minutes.
c. Thread cod pieces and pieces of red onion (quarter vertically) and bell pepper (chop 1" pieces) in sequence on the skewers. Once ready, spray with oil.

Cook jasmine rice:
a. In a medium saucepan, bring 2 cups water (1 cup for 2-person portion) to a boil over high heat.
b. Add ½ tsp salt and jasmine rice. Return to boiling, then reduce heat to low and cook, covered, until tender, about 15-20 minutes.

Meanwhile, cook the cod:
a. Heat 1 tbsp sesame oil (or olive oil) on a griddle over high heat. Place the threaded skewers on the griddle and cook for 1-2 minutes on each side, or until cod is cooked through. Keep brushing the leftover marinade over the cod as it cooks.

Assemble the salad:
a. In a mixing bowl, add the lettuce mix (chop bite-sized), arugula (chop bite-sized), cherry tomatoes (halve) and lemon (juice). Season with salt to taste. Toss to combine well.

Serve:
a. Divide jasmine rice amongst plates. Serve cod skewers and salad alongside. Garnish rice and skewers with cilantro (finely chop). Enjoy!
