Fish Cacciatore with Spaghetti
Cacciatore means hunter in Italian. Traditional cacciatore is a "hunter style" meal prepared with minimal ingredients - onion, tomatoes, some herbs and spices. We jazzed it up with some more veggies.

Cacciatore Sauce Base
Pomegranate juice
4 2 floz
Red wine vinegar
1.5 0.75 tablespoon
Prep ahead (optional)
a. Medium dice the yellow onion, bell peppers and carrots. b. Quarter cremini mushrooms, compost tough stems. c. Large dice roma tomatoes. d. Mince garlic. e. Rough chop parsley and basil.
Instructions

Cook the spaghetti:
a. In large saucepan over high heat add 6 cups water and ½ tsp salt; cover and bring to a boil.
b. Add spaghetti; stir to break apart. Return to boil and cook, stirring occasionally, until al dente, about 10-12 minutes. Drain. Drizzle with ½ tbsp olive oil and toss to coat.

Meanwhile, sear the mahi mahi:
a. Season mahi mahi with ½ tsp salt.
b. Heat 1 tbsp olive oil in a large saute pan. Add the mahi mahi. Sear for about 2-3 minutes on each side. Set aside.

Cook the cacciatore:
a. Add 1 tbsp olive oil to the same saute pan. Add the onion and saute till transparent, about 3-4 minutes.
b. Add the garlic (mince), bell peppers (medium dice), carrots (medium dice), cremini mushrooms (quarter, compost tough stems) and cacciatore spice mix. Saute for 5 more minutes, or until vegetables begin to soften.
c. Add the cacciatore sauce base and cook for 5 more minutes, or until the liquid reduces a little.
d. Add the roma tomato (large dice) and tomato paste. Stir to combine. Add salt to taste.
e. Cover and cook for 10 minutes on low heat.
f. Add the seared fish (chop into 1" pieces) and kalamata olives. Let simmer for 5 more minutes.

Serve:
a. Divide spaghetti amongst plates. Top with fish cacciatore. Garnish with parsley (rough chop) and basil (rough chop). Enjoy!
Chef's notes
You can swap the sauce base (pomegranate juice + red wine vinegar) for a sweet red wine instead. 4 fl oz for a 4-P portion and 2 fl oz for a 2-P portion.
