Fennel and Orange Salad
The sweetness of the apricots and oranges complements the sharpness of the fennel in this salad. We added cannellini beans for a protein boost.

Prep ahead (optional)
a. Quarter fennel lengthwise. Thinly slice. b. Cut orange into segments. c. Thinly slice yellow onion and cucumber. d. Halve cherry tomatoes. e. Rough chop mint leaves.
Instructions

Toast the bread:
a. Slice the ciabatta roll into 2" strips. Brush with olive oil.
b. Toast them on a skillet 1-2 minutes each side or until it reaches desired brownness.

Assemble salad and serve:
a. In a small saute pan, heat ½ tsp olive oil and add the macadamia nuts (rough chop). Toast for a minute or two, watching closely.
b. In a bowl, mix together the cannellini beans (drain), dried apricots (rough chop), fennel (quarter lengthwise, thinly slice), orange (cut into segments), yellow onion (thinly slice), cucumber (thinly slice) and cherry tomatoes (halve). Add ½ tsp salt and pour over the orange and agave vinaigrette. Toss to coat.
c. Divide salad into bowls. Top with toasted bread, macadamia nuts and mint leaves (finely chop). Enjoy!
Chef's notes
You can slice the fennel for the salad ahead of time; just place it in a bowl of water, together with the juice of half a lemon to prevent it from browning.
