Easy Thanksgiving Dinner with Beef
This kale salad is the base for all the nostalgic flavors of home, with none of the guilt. Roasted beef, rosemary potatoes, acorn squash, green beans, dried cranberries, and toasted pecans are all tossed with a maple balsamic vinaigrette.

Prep ahead (optional)
a. Snap stem ends off green beans; leave beans whole or snap bite-sized. b. Cut fingerling potatoes in half lengthwise. c. Remove kale stems; tear leaves bite-sized. d. Cut acorn squash in half, scoop out seeds, and cut into half-moons. e. Cut cremini mushrooms into ½”-thick slices. f. Thinly slice red onion.
Instructions

Roast beef and vegetables:
a. Preheat oven to 425º. Prep large baking pan with olive oil.
b. Season top sirloin with ½ tsp salt and autumn spice mix.
c. Add fingerling potatoes (cut in half lengthwise) and acorn squash (cut in half, scoop out seeds, cut half-moons) to baking pan, leaving enough room for beef. Drizzle with 1 tbsp olive oil; season with ¼ tsp salt and ⅛ tsp black pepper. Roast for 12-15 minutes.
d. Meanwhile, in large saute pan over medium-high heat, add 2 tsp olive oil. Add top sirloin, cook for about 2 minutes each side. Transfer to baking pan alongside vegetables.
e. Roast for 5-7 minutes or until top sirloin reaches desired doneness and vegetables are fork-tender.

Prep kale salad:
a. In large bowl, add kale (remove stems, tear leaves bite-sized).
b. Drizzle with 2 tsp olive oil; toss to coat. Set aside for kale to soften.

Cook green beans and mushrooms:
a. In same saute pan over medium-high heat, add red onion (thinly slice) and mushrooms (½”-thick slices) to beef drippings; saute until golden and caramelized, about 3-4 minutes. Remove from pan and set aside.
b. Add green beans and ¼ cup water to saute pan. Simmer until desired tenderness is reached. Salt to taste.

Assemble salad and serve:
a. In small saute pan over high heat, add pecans. Toast until golden and fragrant, about 2 minutes. DON’T WALK AWAY!
b. Add roasted acorn squash and dried cranberries to kale salad. Add maple balsamic vinaigrette and toss to coat.
c. Cut top sirloin in 1” strips and top salad. Add roasted fingerlings, mushrooms, and green beans alongside.
d. Garnish with toasted pecans and bits of chevre. Enjoy!
Chef's notes
This salad can be made vegetarian by replacing the top sirloin with tempeh or portobello mushrooms.
