Cuban Mojo Tofu Sandwich and Black Bean Salad

Easy Tiger Sourdough Bread
1/2 0.25 Whole
Whole grain mustard

Mojo Dressing
Olive oil
2 1 tablespoon
Orange juice
3 1.5 tablespoon
Minced Garlic
2 1 Clove
Dried oregano
1/2 0.25 teaspoon
Cumin powder
1 0.5 teaspoon
Black pepper
1/4 0.125 teaspoon
Tofu Marinade (Red Dot)
Orange juice
1/3 0.165 cup
Lime juice
2 1 tablespoon
Minced Garlic
4 2 Clove
Brown sugar, dark
2 1 teaspoon
Dried oregano
1 0.5 teaspoon
Prep ahead (optional)
a. Medium dice red onion and bell peppers. b. Halve cherry tomato. c. Husk corn, remove kernels from cob. d. Thinly slice cucumber. e. Chop lettuce bite-sized. f. Rough chop parsley.
Instructions

Cook the tofu and sweet corn:
a. Remove excess moisture from tofu by pressing it down and pat dry with a kitchen towel. Slice into ½" thick slices.
b. Add the tofu slices to a bowl and pour the tofu marinade (red dot) over it. Let it marinate for 20-30 minutes.
c. Heat ½ tbsp olive oil in a saute pan. Add the sweet corn (husk, remove kernels from cob). Saute for about 2 minutes. Remove from pan.
d. Heat ½ tbsp olive oil in the same saute pan. Add the tofu. Cook for about 3 minutes each side, or until browned well.

Assemble the salad:
a. In a large mixing bowl, add the sweet corn, red onion (medium dice), bell peppers (medium dice), cherry tomato (halve) and black beans (drain, rinse). Season with salt to taste. Pour over the mojo dressing and toss to combine well.

Assemble sandwich and serve:
a. Preheat oven to broil.
b. Brush sourdough slices with oil and arrange them on a baking tray. Toast in oven for about 2 minutes.
c. Arrange 4 slices on a large chopping board. Place a serving each of the lettuce mix (chop bite-sized) and cucumber (thinly slice) on the bread. Arrange a grilled tofu slice on top. Spread some whole grain mustard on the remaining slices and place them on top of the slices with the tofu.
d. Plate the sandwiches. Serve black bean salad alongside, garnished with parsley (rough chop).
Chef's notes
If you don't prefer tofu, you can sub in some mushrooms for it.
