Crispy Tempeh Salad with Almonds
An easy crispy tempeh salad that is ready in 20 minutes. The citrus notes of the dressing pair well with the spicy arugula and the nutty tempeh. Toasted almonds make for the perfect topping.

Citrus Vinaigrette
Olive oil
1/4 0.125 cup
Orange juice
2 1 tablespoon
Apple cider vinegar
1 0.5 tablespoon
Dijon mustard
1 0.5 teaspoon
Minced Garlic
1 0.5 Clove
Vegan sugar
1/2 0.25 teaspoon
Prep ahead (optional)
a. Peel carrot; chop into matchsticks. b. Thinly shred red cabbage. c. Thinly slice red onion. d. Pit avocado; thinly slice. e. Chop lettuce mix bite-sized.
Instructions

Cook the tempeh:
a. Slice tempeh into ½" strips. Season with ½ tsp salt.
b. Heat 1 tbsp olive oil in a saute pan. Add the tempeh. Cook until tempeh is golden brown, about 1-2 minutes each side.

Assemble the salad:
a. In a large bowl, combine the lettuce mix (chop bite-sized), red onion (thinly slice), red cabbage (thinly shred), carrots (peel; chop into matchsticks), avocado (pit, thinly slice) and cannellini beans (drain, rinse). Season with salt. Drizzle citrus vinaigrette over the salad and toss to coat evenly.

Serve:
a. Heat a small saute pan over medium heat. Add the sliced almonds. Toast for about a minute, stirring regularly. Watch closely.
b. Divide salad amongst bowls. Top with fried tempeh slices and toasted almonds. Enjoy!
Chef's notes
For a spicy twist, season the tempeh with some black pepper before frying.
