Creamy Chicken Pasta Soup
Laden with nutritious veggies, delectable cream cheese and herby chicken, this soup is just the thing you want to come back to after a hectic work day.

Prep ahead (optional)
a. Thinly slice yellow onion and celery. b. Peel carrots, medium dice. c. Chop kale leaves and spinach bite-sized. d. Rough chop parsley.
Instructions

Sear the chicken:
a. In a bowl, season the chicken thighs with ½ tsp salt.
b. Heat 1 tbsp olive oil in a saute pan. Add the chicken. Sear for 3-4 minutes on both sides. Remove into bowl and keep aside.

Cook the soup:
a. Heat ½ tbsp olive oil in a large pot. Add the onions (thinly slice), celery (thinly slice) and carrots (peel, medium dice). Saute for about 3-5 minutes or until onions have softened.
b. Add vegetable broth paste and 4 cups water (2 cups for 2 person portion). Stir well to combine.
c. Add seared chicken. Cover and bring to a simmer. Reduce heat to low, cover with lid tilted slightly, and cook for 10-12 more minutes, or until chicken is cooked through.
d. Add the elbow pasta. Remove chicken from the pot using tongs or a slotted spoon. Increase heat to medium high and bring to a boil. Cook until pasta is al-dente, about 8 minutes.
e. Meanwhile, transfer chicken to chopping board and chop into bite-sized pieces.
f. Add the cream cheese to the soup. Stir well to combine.
g. Add the spinach (chop bite-sized), kale (chop bite-sized), chopped chicken and pasta soup spice mix. Cook for about 3 more minutes, or until kale is wilted.

Serve:
a. Divide soup amongst bowls. Garnish with parsley (rough chop). Enjoy!

If chicken is not your preferred protein for this soup, you can make it with any flaky white fish.
