Corn Tomato and Chicken Salad
Chicken infused with mediterranean spices is the centerpiece of this appetizing salad bursting with fresh flavors from the veggies and a luxurious champagne vinaigrette for dressing.

Prep ahead (optional)
a. Thinly slice the red onion. b. Slice roma tomatoes into thick wedges. c. Husk corn. d. Divide lemon into 2. Juice half and thinly slice the remaining for garnish. e. Chop arugula bite-sized or leave whole. f. Mince thyme leaves. g. Leave bay leaves whole.
Instructions

Roast the corn:
a. Preheat oven to 400º. Prepare a baking sheet with non-stick spray.
b. Brush corn with olive oil. Place corn on baking sheet and roast until tender and just starting to brown, about 20 minutes.
c. Set aside to cool. Once cool, slice kernels off the cob.

Meanwhile, cook the chicken:
a. Portion chicken thighs and season with ½ tsp salt.
b. Warm 1 tbsp olive oil in a saute pan. Turn off heat once oil is warm. Add the bay leaves and let them sit for 3-4 minutes for the aroma to infuse. Compost bay leaves.
c. Heat the oil again and add the chicken. Cook for about 6-8 minutes each side, or until chicken is cooked. Set aside to cool.
d. Chop the chicken into bite-sized chunks once cool. Add half the lemon (juice) and the zaatar spice mix. Toss to coat evenly.

Assemble the salad:
a. Add the thyme leaves (mince) to the champagne vinaigrette and mix well.
b. In a large bowl, mix together the red onion (thinly slice), roma tomato (slice into thick wedges), arugula (chop bite-sized or leave whole), corn kernels, chicken pieces and ½ tsp salt. Pour champagne vinaigrette over the salad and toss to coat.

Serve:
a. Heat a small saute pan over medium heat. Add the pistachios (rough chop or leave whole) and toast for about 2 minutes, stirring occasionally. Watch closely!
b. Divide salad amongst bowls. Garnish with toasted pistachios and the remaining lemon (thinly slice). Enjoy!
Chef's notes
An alternative method would be to poach the chicken instead of pan-frying it. Add the bay leaves and half the lemon (thinly slice) to 6 cups of water and bring to a boil. Let it boil for 15 minutes on a low simmer for the water to be infused with the aromatics. Gently slide the chicken into the water and cook till it is cooked through, about 15 minutes.
