Cod with Mushroom and Onion Gravy
This is a recipe your grandma might serve for Sunday supper — if your grandma had a penchant for gourmet fare, that is. This meal is at once wholesome and highbrow with its onion and mushroom gravy and a massaged kale salad with sweet dried cranberries and funky-wonderful blue cheese.

Prep ahead (optional)
a. ¼” dice kale stems; tear or chop leaves bite-sized. b. ¼” slice cremini and shiitake mushrooms caps; compost stems. c. Thinly slice red onion and yellow onion. d. Thinly slice or mince garlic. e. Strip thyme leaves from stem and mince.
Instructions

Cook cod:
a. Season cod with ½ tsp salt and ½ tsp black pepper.
b. Heat 1 tbsp olive oil in a saute pan. Add the cod. Cook for 5-7 minutes each side, or until cod is cooked through.

Cook onion and mushroom gravy:
a. In same sauté pan over medium heat, add 1 tbsp olive oil and 1 tbsp (½ tbsp for 2 person portion) butter. Add yellow onion (thinly slice), garlic (thinly slice or mince), ¼ tsp salt, and thyme (strip leaves from stem & mince); sauté until onion is translucent, about 2 minutes.
b. Add cremini and shiitake mushrooms (¼” slices, compost too-tough stems); cook until soft and onions caramelize, about 4-5 minutes.
c. Make roux by sprinkling in 2 tbsp (1 tbsp for 2 person portion) flour (use gluten-free flour if desired) while stirring. Add vegetable broth paste and slowly whisk in 1 cup water, continuing to whisk to avoid lumps.
d. Reduce heat to low; cook until flour flavor cooks out, about 8-10 minutes. Salt to taste.

Assemble kale salad:
a. In small sauté pan over high heat, add sliced almonds; toast until golden about 2 minutes. Watch closely!
b. Add cranberry vinaigrette base and cranberries (rough chop or leave whole) to microwave-safe bowl. Cook 10-15 seconds. Set aside.
c. In large bowl, add kale (¼” dice stems, tear leaves bite-sized), red onion (thinly slice), and warm cranberry vinaigrette; toss to coat.
d. Add blue cheese and toasted almonds. Toss to combine.

Serve:
a. Divide cod among plates.
b. Spoon mushroom and onion gravy over cod.
c. Serve kale salad alongside. Pour the wine and enjoy.
