Cod and Chickpea Posole
A traditional Mexican posole with a twist - chickpeas replace the hominy for a punch of extra protein. This soup is extra special thanks to the toppings: shredded cabbage, radishes, creamy avocado and a squeeze of lime. And local flour tortillas for dipping!

Prep ahead (optional)
a. ¼” dice yellow onion. b. Cut avocados into wedges or ½” pieces. c. Cut potatoes into ½” pieces. d. Slice lime into wedges. e. Thinly slice cabbage, radish, and red onion. f. Mince garlic.
Instructions

Cook the posole:
a. Drain and rinse chickpeas. Set aside.
b. Dice cod in ½-1” pieces. Add to medium bowl. Add ½ tsp salt and half of posole spice mix. Toss to coat. Set aside.
c. In large saucepan or dutch oven, over medium-high heat, add 1 tbsp olive oil. Add marinated cod; cook until browned, about 2-3 minutes. Fish does not need to be cooked through at this point. Remove from pan and set aside.
d. Add 1 tbsp olive oil to pan over medium-high heat. Add ½ yellow onion (¼” dice), garlic, and ½ tsp salt; Cook until onions are translucent, about 2 minutes.
e. Add red potatoes (½” pieces) and remaining posole spice mix; stir to coat.
f. Add vegetable broth paste and 4 cups water (2 cups for 2-person portion); stir to combine. Add cod and chickpeas. Reduce heat to medium, cover and cook at low boil until potatoes are fork tender and fish is cooked throughout, about 10-12 minutes, depending on size of potatoes.

3. Serve:
a. In medium sauté pan, over high heat, add one flour tortilla. When tortilla puffs and toasts, flip. Toast other side until warmed through. Continue until desired tortillas are warmed.
b. Divide cod and chickpea posole among bowls. Add squeeze of lime (cut in wedges) if desired.
c. Garnish with cabbage (thinly slice), red onion (thinly slice), radishes (thinly slice coins), and avocado (cut wedges or ½” pieces).
Chef's notes
If you would like to go with a more authentic version of this soup, trade the chickpeas for hominy. Vegetarians and vegans can nix the chicken and add another package of chickpeas.
