Chili Chicken Noodles
Chinese Five Spice elevates the chicken in this Chinese noodle dish. We added veggies like broccoli, bell pepper and cremini mushrooms to make it all the more wholesome.

Chili Noodle Sauce

Prep ahead (optional)
a. Thinly slice yellow onion, green onion and bell pepper. b. Chop broccoli into bite sized florets. c. ½” slice cremini mushroom caps, compost tough stems. d. Mince garlic.
Instructions

Cook the noodles:
a. In large saucepan over high heat, bring 6 cups water to boil. Add 1 tsp salt.
b. Add rice noodles; stir immediately to prevent sticking.
c. Cook until al dente, about 5-7 minutes. Drain and set aside.

Cook chicken and vegetables:
a. Chop chicken thighs into bite sized pieces. Season with ½ tsp salt and Chinese 5 spice.
b. Heat 1 tbsp sesame oil (or olive oil) in a large saute pan. Add the chicken. Cook for 8-10 minutes, stirring regularly, or until chicken is cooked. Remove from pan and set aside.
c. Heat 1 tbsp sesame oil (or olive oil) in the same pan. Add yellow onion (thinly slice). Saute for 2 minutes.
d. Add garlic (mince) and saute for 1 more minute.
e. Add broccoli (chop bite sized florets), bell pepper (thinly slice) and cremini mushrooms (½” slice caps, compost tough stems). Saute for 2 minutes.
f. Add the cooked chicken, noodles and chili noodle sauce. Stir and toss to mix well.

Serve:
a. Divide chili chicken noodles into plates. Garnish with green onion (thinly slice). Enjoy!
Chef's notes
While the heat in this meal is not very high, you can add a dash of honey to the chili noodle sauce to balance it, if desired.
