Butternut Squash Flatbread Pizza
This could be one of the prettiest pizzas you ever make, thanks to golden butternut squash that's roasted until tender and sweet. The squash and kale top the crunchy-tender flatbread that is slathered with a cranberry goat cheese spread.

Prep ahead (optional)
a. Strip rosemary and finely mince leaves. Reserve stem. b. Peel butternut squash, cut in half, remove seeds, and chop ½-1” pieces. c. ¼” dice ½ yellow onion. d. Tear kale leaves off stem and thinly slice. Mince stems. e. Mince garlic.
Instructions

Prep:
a. Preheat oven to 425º.
b. Place goat cheese spread base in small mixing bowl.
c. Rough chop or mince dried cranberries. Add to bowl. Wait to fold them in until spread has softened, about 5-10 minutes.

Roast butternut squash:
a. To large mixing bowl, add butternut squash (peel, cut in half, remove seeds, chop ½-1” pieces), 1 tbsp olive oil, ½ tsp salt, and ¼ tsp black pepper. Toss to coat.
b. Add in an even layer to medium baking pan; roast until squash is tender but still holds its shape, about 12-15 minutes.

Saute onion and kale:
a. In large sauté pan over medium-high heat, add 1 tbsp olive oil, ½ yellow onion (¼” dice), ¼ tsp salt, and rosemary stem (without leaves). Sauté until soft and caramelized, about 5-7 minutes.
b. Add garlic (mince) and curly kale stems and leaves (tear leaves from stem and finely slice, mince stems). Sauté until softened, about 2-3 minutes. Compost rosemary stem.

Assemble and bake flatbread pizza:
a. Fold dried cranberries into goat cheese spread base. Spread onto naan, leaving about ½” edge.
b. In an even layer, add caramelized onions and kale.
c. Top with roasted butternut squash, minced rosemary, and walnuts (rough chop).
d. Add pizzas to large baking pan and cook until edges are crispy and goat cheese spread softens, about 8-10 minutes.

Serve:
a. Slice pizzas into manageable pieces and add to plate or cutting board in center of table for people to pull from.
b. Pour a glass of wine and enjoy!

If adding meat is a must, we recommend chicken as a flavor match. Or, go pure holiday season and add roast or smoked turkey.
