Black Bean and Avocado Lettuce Wraps
We decided to marry two of our favorite recipes - tacos and lettuce wraps. And we ended up with this delightful fusion - fresh, full of nutrition and delicious, to top it all.

Prep ahead (optional)
a. ¼” dice red onion, Roma tomato and cucumber. b. Pit avocado, ¼” dice. c. Juice lime. d. Rough chop cilantro. e. Deseed jalapeno as desired, mince.
Instructions

Prepare black bean and avocado mix:
a. Heat the black beans (drain and rinse) in a pot until warmed. Add the taco seasoning. Stir well to combine. Use the back of a spoon to lightly mash some of the black beans. Remove from heat.
b. Add the avocado (pit, ¼" dice), cucumber (¼” dice), half the cilantro (rough chop), half the lime juice and ¼ tsp salt. Stir well to combine.

Prepare pico de gallo:
a. In a small bowl, add red onion (¼” dice), tomatoes and their juices (¼” dice), the remaining cilantro (rough chop), the remaining lime juice, jalapeno (Optional; deseed as desired, mince) and ¼ tsp salt. Toss to combine.

Serve:
a. Place the romaine lettuce leaves (leave whole), the black bean and avocado mixture, the pico de gallo and the pumpkin seeds at the table. Let diners assemble their own wraps as desired. Enjoy!
Chef's notes
Instead of serving the lettuce wraps with chopped avocado, you can also make guacamole. Mash the avocado and stir in 1 garlic clove (mince), a small red onion (finely chop) and a tomato (finely chop). Add a tablespoon of lime juice and salt to taste. Mix well. Leave in refrigerator for half an hour for the flavors to blend.
